Ingredients
- Corn tortillas8
- Oil sprayfor misting
- Fine sea salt1 tsp
- Lime1
- Chili-lime seasoning1 tsp
Method
Cut the wedges
Stack the tortillas and slice through them into six even triangles, like cutting a pizza. Uniform wedges cook at the same rate, so none scorch on the edges while others stay chewy in the centre.
Season the chips
Toss the triangles in a bowl with a fine mist of oil so the salt and chili-lime seasoning can stick. Go light with the oil, since a heavy hand leaves them greasy rather than crisp.
Squeeze and toss
Add a small squeeze of lime juice and toss again so every wedge is coated. The little hit of acid lifts the corn flavour and balances the salt so the chips do not taste flat.
Spread them out
Lay the wedges in a single layer with barely any overlap so the hot air reaches each one. You will probably need a couple of batches, but that is the price of the crispest chips.
Air-fry till crisp
Air-fry at 180°C for 7 min, shaking the basket twice, until the chips are pale gold and audibly crunchy. Watch them near the end, as thin corn wedges tip from golden to burnt quickly.
