Ingredients

  • Frozen aloo tikki6 pieces
  • Oil spray1 tsp
  • Chaat masala1/2 tsp
  • Imli chutney3 tbsp
  • Whisked curd4 tbsp

Method

  1. Cook straight from frozen

Air-fry the tikkis straight from frozen so the potato keeps its shape and the edges crisp instead of crumbling. Letting them defrost first makes them soft and mushy, and they are far more likely to break apart in the basket.

  2. Oil both faces

Spray a thin layer of oil on the top and bottom of each tikki so the surface turns deep golden and crackly. That light film of fat recreates the crisp crust you would get from shallow-frying on a tawa.

  3. Single layer placement

Lay the tikkis flat with gaps between them so the hot air can reach every edge evenly. Crowding the basket traps steam between the patties, which leaves pale, damp spots and a soft, cool centre in the middle.

  4. Flip carefully

Turn each tikki over halfway through using a flat spatula so both sides brown without the patty cracking. Slide the spatula right under the whole tikki and press gently if a piece starts to loosen at the edges.

  5. Air-fry until crisp

Air-fry at 190°C for 16 min until the edges are crackly-crisp and the centre is piping hot right through. Top with whisked curd, imli chutney and a dusting of chaat masala for an instant tikki chaat.
