Ingredients
- Plain flour2 cups
- Hot water3/4 cup
- Spring onion greens1 cup
- Sesame oil2 tbsp
- Salt1 tsp
- Oil for brushing2 tbsp
Method
Make the dough
Mix the flour with hot water into a shaggy dough, knead until smooth, then rest it for 20 minutes under a cloth. The hot water softens the gluten, which keeps the pancakes tender and makes the dough easy to roll thin.
Layer the scallions
Roll the dough thin, brush it with sesame oil, scatter over the salt and chopped scallions, then roll it into a rope and coil it up. Flattening the coil gently traps thin layers of oil that puff and flake apart as they cook.
Cut into bites
Roll the coil out again into a round and cut it into bite-sized squares. Brush every square on both sides with a thin coat of oil, which helps the surface brown evenly into a crisp, golden finish.
Air-fry until flaky
Arrange the squares in a single layer and air fry at 190°C for 11 min, flipping once. They are ready when the edges are golden and crisp and the layers have puffed apart into flaky, tender leaves.
