Ingredients
- Paneer cubes250 g
- Thick curd1/2 cup
- Tandoori masala2 tbsp
- Capsicum & onion strips1.5 cups
- Lachha parathas4
- Oil sprayas needed
Method
Marinate the paneer
Whisk the curd with tandoori masala, a little oil, lemon and salt, then fold in the paneer and pepper-onion strips. Let everything sit at least fifteen minutes so the smoky spices soak right in.
Air-fry the filling first
Spread the marinated paneer and veg on the basket and air-fry at 200C for 8 minutes until charred at the edges. Toss once so the cubes colour evenly without drying out.
Warm the parathas
Heat the lachha parathas briefly so they turn pliable and the layers loosen. A soft paratha rolls without cracking and keeps the filling secure.
Roll them up
Lay a line of the hot paneer mix down each paratha, add sliced onions and a squeeze of lemon, then roll into a tight cylinder. Tuck the seam under and wrap the base in parchment for grip.
Crisp the finished roll
Mist the rolls with oil and air-fry at 190C for 10 minutes, turning halfway, until the paratha is golden and shatteringly crisp. Slice on the diagonal and serve with mint chutney.
