Ingredients

  • Blanched chopped spinach, squeezed1.5 cups
  • Grated mozzarella and cheddar1 cup
  • Boiled mashed potato3/4 cup
  • Bread crumbs1 cup
  • Black pepper1 tsp
  • Saltto taste

Method

  1. Dry the spinach

Squeeze the blanched spinach hard in your hands to wring out all the water before you mix it in. Wet spinach loosens the dough and makes the balls slump and hard to shape, so drier is always better.

  2. Make the dough

Mix the squeezed spinach with the grated cheese, mashed potato, black pepper and salt into a firm, scoopable dough. The potato binds the leafy spinach and traps the cheese safely inside each ball.

  3. Roll and crumb

Shape the mix into balls and roll each one fully in bread crumbs with no bare spots. A complete crumb coat seals the cheese in and gives you a crunchy outside once cooked.

  4. Oil and arrange

Spray the balls all over with oil and set them apart in a single layer. Spacing them out lets the hot air reach and crisp every side evenly instead of steaming them soft.

  5. Air-fry to golden

Air-fry at 190C for 12 min, turning once midway through for even colour. Serve them hot while the crust is crisp and the cheese inside is still soft and stretchy.
