Ingredients
- Puffed rice4 cups
- Oil1 tbsp
- Turmeric1/4 tsp
- Red chilli powder1/2 tsp
- Curry leaves10 leaves
- Saltto taste
Method
Dry out the murmura
If your puffed rice feels even slightly soft, air-fry it plain for 3 minutes first. Murmura absorbs humidity easily and only crisps spice well once it is bone dry.
Make the spiced oil
Mix the oil with turmeric, chilli powder and salt into a loose paste. Pre-blending the spices into the oil spreads them far more evenly than dusting dry powder over light puffs.
Toss gently
Drizzle the spiced oil over the murmura and fold with a light hand. These puffs are extremely fragile, so lift and turn rather than stir to keep them whole.
Add curry leaves
Scatter the curry leaves through the mix so they crisp alongside the rice and release their aroma. Spread everything loosely in the basket in a shallow layer.
Quick crisp
Air-fry at 160C for 8 minutes, shaking gently every couple of minutes. Watch closely since the thin puffs darken suddenly, then cool fully for maximum crunch.
