Ingredients
- Boiled sweet corn1.5 cups
- Green peas, boiled1/2 cup
- Poha (flattened rice)1/2 cup
- Ginger-green chilli paste1 tbsp
- Garam masala1 tsp
Method
Soak the poha
Rinse the poha and let it soften for five minutes, then squeeze out the extra water with your hands. Softened poha works as a light binder that holds the tikkis together and keeps them tender rather than dense.
Mash the mixture
Coarsely mash the boiled corn and peas, then mix in the squeezed poha, ginger-green chilli paste, garam masala and salt. Leave a little texture in the mash so the tikkis stay light and do not turn into a pasty lump.
Shape the patties
Divide the mix into rounds and flatten each into a neat tikki about a centimetre thick. Smooth the edges well with your fingers so they do not crack open, since cracks let the tikkis fall apart in the basket.
Air-fry till golden
Mist both sides with oil and air-fry at 190C for 14 min, flipping once halfway so both faces brown. The tikkis are ready when crisp and golden outside and still soft within, so serve them hot from the basket.
