Ingredients
- Focaccia dough300 g
- Olive oil3 tbsp
- Cherry tomatoes, halved8 pieces
- Mozzarella, cubed100 g
- Fresh rosemary2 sprigs
Method
Shape and dimple
Press the dough into a small oiled tray that fits your basket and stretch it into an even slab. Poke deep dimples all over with your fingertips, which trap oil and give focaccia its signature dips.
Oil and rest
Drizzle olive oil generously so it pools in the dimples, then leave the dough to rest for 15 minutes. This short proof relaxes the dough and gives the focaccia its light, open crumb.
Add toppings
Press the cherry tomato halves and mozzarella cubes into the surface and tuck small sprigs of rosemary between them. A final pinch of flaky salt adds little bursts of savour and contrast.
Air-fry until risen
Air-fry at 180°C for 15 min until the focaccia is puffed, deep golden, and the cheese has melted into the dough. Let it cool a little so the crumb sets, then cut it into squares.
