Ingredients

  • Bread slices6
  • Spiced mashed potato2 cups
  • Green coriander chutney4 tbsp
  • Cucumber, tomato, onion1 cup sliced
  • Chaat masala & butterto taste
  • Oil sprayas needed

Method

  1. Layer the chutney

Butter the bread and spread a bold layer of green coriander chutney on the inner faces. A generous chutney layer is the heart of a Bombay toast and keeps the inside moist and full of flavour.

  2. Stack the fillings

Spread the spiced potato over one slice and fan out the cucumber, tomato and onion on top. Dust the vegetables with chaat masala for that tangy street flavour, and keep the layer even so it presses flat.

  3. Close and press

Cap with another slice, press gently and cut each sandwich in half. Brushing the outsides with a little butter or oil helps them toast to an even gold instead of drying out in dull spots.

  4. Toast in the basket

Lay the sandwiches flat in a single layer and air-fry at 190°C for 12 min, flipping once halfway. Pull them out when the bread is crisp and golden. A single layer lets the air reach both sides.
