Ingredients
- Fine rava (semolina)3/4 cup
- Boiled potato, mashed1 large
- Mixed veg (peas, carrot), finely chopped1 cup
- Garam masala1 tsp
- Ginger-green chilli paste1 tbsp
- Oil, for brushing2 tbsp
Method
Roast and bind
Dry-roast half the rava until lightly fragrant, then mix it with the mashed potato, chopped vegetables, garam masala, ginger-chilli paste and salt. The roasted rava both binds the mix and adds nuttiness.
Form the cutlets
Knead the mixture into a soft dough and shape it into flat oval patties. Chill them for ten minutes so they firm up and hold together while coating.
Crumb with rava
Press each patty into the remaining raw rava so both faces are well coated. The dry rava crust is what crisps into a golden shell in the air fryer.
Oil and preheat
Brush both sides of every cutlet with oil and preheat the air fryer for three minutes. The oil is essential for the rava to brown rather than stay pale.
Air-fry until crisp
Arrange the cutlets in a single layer and air-fry at 190C for 16 minutes, flipping and re-brushing halfway through. Cook until both sides are crunchy and deep golden; serve with green chutney and ketchup.
