Ingredients
- Large onions2
- Gram flour (besan)1/2 cup
- Breadcrumbs3/4 cup
- Carom seeds (ajwain)1/2 tsp
- Red chilli powder1/2 tsp
- Oil sprayas needed
Method
Cut even rings
Slice the onions crosswise into thick rounds about one and a half centimetres wide and gently separate them into individual rings. Keep the larger rings for frying and save the small inner ones for another dish.
Make the batter
Whisk the gram flour with water, carom seeds, chilli powder, and salt into a smooth batter that coats the back of a spoon. The ajwain not only adds flavour but also helps settle the heaviness of the besan.
Dip and crumb
Dip each ring fully into the batter so it is sheathed all over, then press it firmly into the breadcrumbs on both sides. Set the crumbed rings on a plate and chill them for ten minutes so the coating sets and clings during cooking.
Air-fry until crisp
Mist the rings lightly with oil spray on both sides and arrange them in a single layer without overlapping. Air-fry at 190C for 14 minutes, flipping once halfway through, until the crumb is deeply golden and the onion inside is soft and sweet.
