Ingredients

  • White bread slices8 slices
  • Boiled potatoes3 medium
  • Green chillies2, chopped
  • Fresh coriander2 tbsp
  • Chaat masala1 tsp
  • Turmeric1/2 tsp

Method

  1. Mix the masala potato

Mash the boiled potatoes with green chillies, coriander, chaat masala and turmeric until smooth and well-seasoned. Roll the mixture into eight small logs. A firm, well-mashed filling shapes cleanly inside the bread.

  2. Soften the bread

Trim the crusts and dip each slice quickly in water, then press gently between your palms to squeeze out the excess. The bread should be pliable but not dripping. Over-soaked bread tears, while dry bread cracks.

  3. Encase the filling

Place a potato log on the damp slice and roll the bread around it, sealing the edges by pressing firmly. Smooth the surface into a neat oval with no gaps. Any opening will let the filling dry out in the heat.

  4. Brush and crisp

Brush the rolls with oil on all sides and arrange them with gaps in the basket, turning once. Air-fry at 190C for 12 minutes until the crust is golden and crunchy. Serve hot with ketchup or green chutney.
