Ingredients
- Frozen veg spring rolls8 pieces
- Sesame oil1 tsp
- Schezwan sauce3 tbsp
- Spring onion greens1 tbsp
Method
Keep them frozen
Air-fry the rolls straight from the freezer, since a thawed wrapper turns gummy and can tear open in the basket. Gently pull apart any rolls that are stuck together so each one cooks and crisps on its own.
Brush with sesame oil
Lightly brush each roll with the sesame oil to help it blister into an even golden colour and add a warm, nutty aroma. A pastry brush gives you better control and a thinner, more even coat than a heavy spray here.
Arrange with gaps
Place the rolls seam-side down in a single layer with breathing room between each. That gap stops the wrappers sticking to each other as they puff, so they crisp cleanly instead of tearing when you separate them.
Turn for even crisp
Give each roll a quarter turn halfway through so all four sides crisp up, not just the top and bottom. Keep an eye on the thin ends, which brown the fastest and can catch if you leave them facing the hottest spot.
Air-fry until blistered
Air-fry at 190°C for 13 min until the wrappers are deeply golden and crackle to the touch. Sprinkle over the spring onion greens and serve them hot with schezwan sauce for dipping while crisp.
