Ingredients
- Sweet corn kernels2 cups
- Mini tart pastry cups10 cups
- Melted butter1 tbsp
- Chaat masala1 tsp
- Finely chopped onion1/4 cup
- Lime juice1 tbsp
Method
Dry the corn
Pat the corn kernels dry, then toss them with the melted butter and a pinch of salt. Getting rid of surface water lets the kernels blister and char in the hot air instead of just steaming soft.
Season the kernels
Sprinkle half the chaat masala over the buttered corn and mix it through. Seasoning the kernels before they roast lets the spice toast onto them, so the flavour goes right through, not just on top.
Crisp the cups
Warm the empty pastry cups in the drawer for two minutes so they firm up and hold their shape once filled. Set them aside on a tray to cool a little so they stay crisp under the hot corn.
Fill and finish
Spoon the hot corn into each cup, then stir through the chopped onion, lime juice and the rest of the chaat masala. Adding the lime and onion at the end keeps them fresh and sharp against the sweet corn.
Air-fry the corn
Spread the kernels in the basket and air-fry at 190C for 12 min, shaking once so they colour evenly. They are done when speckled golden and lightly blistered, with a few darker toasted spots for flavour.
