Ingredients
- Bread slices6
- Boiled potatoes, mashed2
- Besan (gram flour)1 cup
- Amchur (dry mango powder)1 tsp
- Turmeric1/2 tsp
- Coriander, chopped2 tbsp
Method
Make the filling
Mix the mashed potatoes with amchur, half the turmeric, coriander and salt into a firm, well-seasoned mash. Taste and adjust the tang so the filling stays bright against the bread.
Stuff and cut
Spread the filling thickly between two bread slices, press to seal and slice each sandwich diagonally into triangles. Trimming the crusts helps the batter wrap right around the edges.
Whisk the besan batter
Beat the besan with the remaining turmeric, salt and enough water to make a smooth medium-thick batter. It should generously coat the back of a spoon without dripping off in sheets.
Dip the triangles
Submerge each triangle so all sides are evenly covered, letting the surplus drain off. A complete seal of batter keeps the bread from drying out in the hot air.
Air-fry until crisp
Place the coated triangles on an oiled basket and mist generously with oil. Air-fry at 200C for 14 minutes, turning halfway, until the shell is set, golden and crunchy.
