Ingredients
- Frozen samosas6 pieces
- Oil spray1.5 tsp
- Imli chutney3 tbsp
- Green chutney3 tbsp
Method
Do not thaw
Cook the samosas frozen so the pastry stays flaky and does not soak up moisture and go limp. Let the basket and the samosas warm up together rather than defrosting them on the counter, which softens the shell.
Coat the pastry
Spray the samosas evenly with oil, paying special attention to the folded edges and corners that tend to dry out and burn. A good, even coat of oil is what gives them that deep-fried golden look and crisp finish.
Preheat for crispness
Run the air fryer empty at 180°C for 3 minutes before you load it, so the pastry sets fast the moment it goes in. A hot start crisps the shell quickly instead of letting it turn chewy as it slowly heats up.
Arrange and turn
Place the samosas with a gap between each and flip them halfway for even browning on all faces. If the thin pointed corners are colouring too fast, turn them away from the hottest part of the basket.
Air-fry until flaky
Air-fry at 180°C for 18 min until the crust is crisp and golden and the filling is steaming hot inside. Serve them hot with imli and green chutney on the side for dipping while the pastry is at its crispest.
