Ingredients
- Sweet corn kernels1.5 cups
- Mozzarella, grated1 cup
- Black pepper and oregano1 tsp
- Bread slices or wrap4 slices
- Plain flour paste2 tbsp
Method
Make the cheesy mix
Mash the sweet corn lightly, then fold in the grated mozzarella, pepper and oregano. Lightly crushing some of the kernels helps the filling bind together, so it stays in a neat log and does not tumble out when you roll and cook it.
Flatten the bread
Trim the crusts off the bread and roll each slice thin with a rolling pin. Thin, flattened bread crisps up far better in the air fryer and rolls around the filling without cracking or splitting at the seam.
Fill and roll
Spoon the corn and cheese mix along one edge of the bread and roll it into a tight log. Seal the seam with a dab of flour paste so it stays firmly closed and the melting cheese cannot leak out while it cooks.
Brush with oil
Coat each roll with a thin, even layer of oil for a uniform golden finish, then set them seam-side down. Cooking seam down first sets the join so the roll holds its shape and does not spring open in the heat.
Air-fry to melt
Cook at 190°C for 10 min until the rolls are crisp outside and the cheese inside is molten. Let them cool for a moment before biting in, so the hot melted filling settles and does not scald your mouth.
