Ingredients
- Cauliflower florets1 medium head
- Plain flour1/2 cup
- Garlic powder1 tsp
- Hot buffalo sauce1/3 cup
- Melted butter2 tbsp
- Smoked paprika1/2 tsp
Method
Cut and rinse
Break the cauliflower into bite-sized florets roughly the size of a walnut so they cook evenly. Rinse and pat them fully dry, because any leftover water will stop the batter from clinging.
Whisk the batter
Stir the flour, garlic powder, smoked paprika and a splash of water into a pourable batter that coats the back of a spoon. Toss the florets through until each piece wears a thin, even jacket.
First crisping
Arrange the coated florets in a single layer in the basket with a little space between them. A light spray of oil here helps the outsides set into a crunchy shell.
Make the glaze
Warm the buffalo sauce with the melted butter until glossy and slightly thickened. This mellows the vinegar bite and gives the coating its signature shine.
Toss in sauce
Tip the part-cooked florets into the warm glaze and turn gently so every bite is slicked with colour. Return them to the basket for the final blast.
Air-fry to finish
Air-fry at 200C for 12 minutes, shaking the basket once at the halfway mark. The bites are ready when the edges are deeply charred and the glaze looks lacquered.
