Ingredients
- Cashews3/4 cup
- Almonds3/4 cup
- Peanuts1/2 cup
- Honey or jaggery syrup1.5 tbsp
- Chaat masala + chilli1.5 tsp
- Oil1 tbsp
Method
Whisk the glaze
Stir the honey or jaggery syrup with the oil, chaat masala, chilli and a pinch of salt into a smooth, pourable glaze. Mixing it well first means every nut gets an even coat rather than sticky clumps.
Coat the nuts
Add the cashews, almonds and peanuts and toss until each one wears a thin, shiny layer of glaze. Let them sit for two minutes so the coating settles and clings instead of sliding straight off.
Spread evenly
Tip the nuts into the basket and spread them into a single loose layer. Crowding traps steam and leaves soft spots, so give them room for the hot air to reach and roast every side evenly.
Shake midway
Pause partway through to shake the basket so the nuts roast uniformly and the glaze caramelises. Watch them closely near the end, as nuts carry a lot of oil and scorch fast once they start to colour.
Air-fry to glossy
Air-fry at 160°C for 11 min, shaking twice, until the nuts are deep golden and fragrant. Cool them fully on a tray, where the glaze hardens from sticky to a crisp, glossy festive shell.
