Ingredients
- Gram flour (besan)1 cup
- Carom seeds (ajwain)1 tsp
- Papad khar / baking soda1/4 tsp
- Oil2 tbsp
- Saltto taste
Method
Make the dough
Whisk the besan with the ajwain, papad khar and salt, then rub in the oil until the flour feels like damp sand. Add warm water a spoon at a time and knead to a stiff, smooth dough, then rest it covered for 15 minutes so it relaxes and rolls out easily.
Roll the ribbons
Pinch off walnut-sized balls and press each flat on an oiled board with the heel of your palm, dragging downward into long, thin ribbons. Aim for an even, near paper-thin sheet, because thick spots stay chewy while thin ones crisp.
Prep for the basket
Brush both sides of every ribbon with a light film of oil so they bronze instead of drying out to a dull, cracked finish. Lay them flat in a single layer without overlapping, or they will stick and steam where they meet.
Air-fry until crisp
Arrange the fafda strips in the preheated basket and air-fry at 180C for 12 minutes, turning once halfway, until pale gold and rigid. Let them cool fully on a rack, where they firm up into a proper snap.
