Ingredients
- Boiled mixed vegetables2 cups
- Boiled potato1 medium
- Roasted gram flour3 tbsp
- Green chilli-ginger paste1 tsp
- Garam masala1 tsp
- Fresh coriander2 tbsp
Method
Mash the base
Combine the boiled vegetables and potato in a wide bowl and mash until mostly smooth with a few small chunks for texture. Make sure there is no excess water or the tikkis will turn soggy when shaped.
Bind and season
Stir in the roasted gram flour, chilli-ginger paste, garam masala and chopped coriander. The roasted flour absorbs moisture and binds the mix without any egg or oil, so knead it lightly until it holds together.
Shape the patties
Divide the mixture into eight equal portions and press each into a flat round tikki about a centimetre thick. Smooth the edges with damp fingers so they do not crack during cooking.
Chill briefly
Rest the shaped tikkis in the fridge for ten minutes to firm them up. This short chill helps them keep their shape and develop a crisper crust in the air fryer.
Air-fry until golden
Arrange the tikkis in a single layer and air-fry at 190C for 15 minutes, flipping once halfway. They are done when both sides are evenly golden and firm to the touch.
