Ingredients
- Flatbread or roti base2 pieces
- Garlic, minced4 cloves
- Butter, melted3 tbsp
- Mozzarella, grated120 g
- Dried oregano and parsley1 tsp
Method
Make garlic butter
Stir the minced garlic and a pinch of salt into the melted butter until it smells fragrant. Let it sit for a few minutes first, which softens the raw garlic bite into something rounder and sweeter.
Brush the base
Slather the garlic butter generously over each flatbread, spreading it right to the edges. The buttered rim is what turns crisp and deeply savoury, so do not leave a dry border.
Add cheese and herbs
Cover the surface evenly with mozzarella and dust it with the oregano and parsley. A thin, even cheese layer melts faster and browns more uniformly than thick clumps that stay pale in the middle.
Air-fry to bubbling
Air-fry at 185°C for 8 min until the cheese is molten with golden freckles and the base is crisp. Brush the hot edges with any leftover garlic butter and slice into strips to serve.
