Ingredients
- Gram flour (besan)1.5 cups
- Rice flour2 tbsp
- Ajwain (carom seeds)1/2 tsp
- Red chilli powder1 tsp
- Turmeric1/4 tsp
- Oil2 tbsp + 1 tbsp for brushing
- Saltto taste
Method
Mix the dry spices
Sift the besan and rice flour into a bowl. Add ajwain (crushed between your palms), chilli powder, turmeric and salt. Mix well so the spice spreads evenly.
Add the oil
Pour in 2 tbsp oil and rub it through the flour with your fingers. The oil keeps the twists crisp instead of hard. The mix should hold when you press it.
Knead the dough
Add water little by little and knead into a firm, smooth dough. Besan gets sticky if it is too wet, so add water slowly. Rest it covered for 10 minutes.
Roll and twist
Roll small portions into thin ropes about the thickness of a pencil and 15 cm long. Fold each rope in half and twist the two strands together, then pinch the ends. You can also join the ends into a small twisted ring.
Brush and arrange
Brush the twists lightly with oil on all sides. Lay them flat in the basket in a single layer. Leave a little room so they brown evenly.
Air-fry crisp
Air-fry at 170°C for 14 min, turning them once halfway, until golden and firm. Let them cool completely on a plate, as they crisp up as they cool. Store in an airtight box for up to two weeks.
