Ingredients
- Flour tortillas4
- Mozzarella1 cup
- Cheddar1 cup
- Pickled jalapenos1/4 cup
- Spring onion2 stalks
- Oil sprayfor brushing
Method
Fill one half
Scatter both cheeses, the sliced jalapenos, and spring onion across one half of each tortilla. Keep the layer even and not too thick, so the middle heats through by the time the outside crisps.
Fold and press
Fold each tortilla into a half-moon and press down gently so the cheese starts to act as glue. A firm press stops them puffing open and flapping about in the air fryer's strong draught.
Brush with oil
Lightly brush both sides with oil so the surface turns golden and shatter-crisp. This thin coat is what gives them that toasted, grilled look you would normally get from a hot pan.
Secure if needed
If your basket has a strong fan, pin the open edge shut with a toothpick so the folded tortilla stays closed. Lay them flat in a single layer with a little space between each.
Air-fry then cut
Air-fry at 190°C for 7 min, flipping once, until crisp and golden. Let them settle for a minute, then slice each half-moon into triangles so the cheese does not ooze straight out.
