Ingredients
- Besan (gram flour)1 cup
- Fresh coriander, chopped1.5 cups
- Ginger-garlic-green chilli paste2 tsp
- Sesame seeds2 tbsp
- Turmeric and red chilli powder1 tsp each
- Oil for brushing1 tbsp
Method
Make the batter
In a wide bowl combine besan, chopped coriander, ginger-garlic-chilli paste, turmeric, red chilli powder and a pinch of salt. Add water a little at a time until you get a thick, scoopable dough that holds its shape on a spoon.
Steam the slab
Grease a shallow steel plate, spread the dough about two centimetres thick, and steam over simmering water for twelve minutes until a knife comes out clean. Let it cool completely so it firms up before cutting.
Cut and coat
Slice the cooled slab into neat squares or diamonds. Brush each piece on both sides with a thin film of oil and press sesame seeds onto the tops for extra crunch.
Preheat and arrange
Preheat the air fryer and lay the vadis in a single layer with space between them so hot air circulates. Avoid crowding or they steam instead of crisping.
Air-fry to golden
Air-fry at 180C for 14 minutes, flipping the pieces halfway through so both faces brown evenly. They are ready when the edges are deep gold and the surface sounds crisp when tapped.
