- Garlic clove1
- Olive oil3 tbsp
Method
Make the topping
Dice the tomatoes and toss them with torn basil, a tablespoon of olive oil, salt and pepper. Let the bowl sit while you toast the bread; the salt draws out the juices and the flavours mingle into a fresher, brighter topping.
Prep the bread
Brush both sides of each baguette slice lightly with olive oil. A thin, even coat is what carries the dry air-fryer heat into the surface, so the bread turns crisp and golden rather than drying out hard and chalky.
Rub with garlic
As soon as the toasts come out and are still hot, rub the cut face of a raw garlic clove over each one. The rough, crisp surface works like a grater and shaves the garlic into a light, fragrant rub without any raw bite.
Air-fry the toasts
Lay the oiled slices in a single layer and air-fry at 180°C for 6 min, until crisp and golden at the edges. Spoon the tomato mixture over only just before serving, since sitting too long lets the juices soak in and soften the crunch.
