Ingredients
- Mixed nuts2.5 cups
- Honey1.5 tbsp
- Red chilli flakes1 tsp
- Roasted cumin powder1/2 tsp
- Sea salt1/2 tsp
Method
Combine the nuts
Tip the cashews, almonds and walnuts into a bowl together. Since each nut roasts at a slightly different speed, a mid-size pieces mix keeps them roughly in sync.
Make the glaze
Warm the honey slightly so it flows, then stir in the chilli flakes, cumin and sea salt. Warm honey coats far more evenly than cold honey straight from the jar.
Toss to coat
Pour the spiced honey over the nuts and toss until they are uniformly sticky. The glaze should cling in a thin film rather than pooling at the bottom.
Spread carefully
Lay the nuts in a single layer in the basket, separating any clumps. Sugary glazes burn fast, so keeping them spread out protects against dark scorched spots.
Roast and crisp
Air-fry at 150C for 11 minutes, shaking every 4 minutes to stop the honey caramelising in one place. They feel tacky when hot but set to a glossy crunch once fully cooled.
