Ingredients
- Frozen onion rings250 g
- Oil spray1 tsp
- Smoked paprika1/2 tsp
- Peri-peri mayo3 tbsp
Method
Use them frozen
Drop the rings in frozen so the batter crisps up instead of going soggy from melting frost. Shake off any loose ice crystals before you load the basket, since that extra water would only steam the coating soft.
Mist lightly
Spray a fine, even layer of oil over the rings so the coating turns golden and crunchy. Keep it light, because a heavy spray pools at the bottom of the basket and leaves the undersides greasy rather than crisp.
Spread in one layer
Arrange the rings flat with as little overlap as you can so air circulates around each one. If you have a lot, cook them in two batches rather than piling them up, which would leave the middle ones pale and soft.
Shake for even crisp
Shake the basket once or twice during cooking to turn the rings and brown them on all sides. Shaking also stops them fusing together where they touch, so no two rings weld into one as the batter sets.
Air-fry to crunch
Air-fry at 200°C for 11 min until the coating is deep golden and crisp right through. Dust the hot rings with smoked paprika and serve them straight away with the peri-peri mayo for dipping.
