Ingredients
- Soaked sabudana1 cup
- Boiled potato, mashed2 medium
- Crushed roasted peanuts1/2 cup
- Green chilli, chopped2
- Cumin & rock saltto taste
Method
Drain the sabudana
Soak the sabudana overnight and drain it completely so the pearls are soft but separate. Wet pearls make the vada sticky and dense, so let them sit in a colander for a few minutes.
Mix the dough
Combine the sabudana with mashed potato, crushed peanuts, green chilli, cumin and rock salt. Mix gently until it just holds together without overworking, keeping the texture light.
Shape the vadas
Grease your palms and roll the mix into balls, then flatten into thick discs. Damp hands stop the sticky pearls from clinging and give you clean, even rounds.
Oil generously
Brush both faces with a little extra oil since sabudana needs it to crisp without proper frying. Place the discs apart in the basket for even browning.
Air-fry till crunchy
Air-fry at 200C for 15 minutes, flipping halfway, until the pearls turn glassy and the surface is crunchy. Serve hot with peanut-coconut chutney.
