Ingredients
- Paneer250 g, cubed
- Crushed black pepper1 tsp
- Garlic powder1 tsp
- Cornflour1 tbsp
- Olive oil1 tsp
Method
Pat the paneer dry
Blot the paneer cubes all over with a paper towel to lift off the surface moisture. Dry cubes are the trick to a crisp finish, because any water on the surface turns to steam and leaves them soft rather than golden.
Season and dust
Toss the cubes with the crushed pepper, garlic powder, a little oil and a light dusting of cornflour. The thin cornflour layer dries in the heat and forms a crust that browns and crisps far better than bare paneer would.
Lay them out
Spread the cubes in a single layer so hot air can move freely around each one. If you pile them up they trap steam between them and soften, so give every cube a little breathing space in the basket.
Air-fry until golden
Air-fry at 190°C for 12 min, turning the cubes once at the halfway mark so they colour evenly. Pull them out as soon as the edges look crisp and golden, since paneer can dry inside if you push it much further.
