Ingredients
- White sandwich bread6 slices
- Pizza sauce3 tbsp
- Mozzarella, grated100 g
- Capsicum and onion, finely chopped1/3 cup
- Butter, softened2 tbsp
Method
Flatten the bread
Trim the crusts and roll each slice flat with a rolling pin until it is thin and pliable. Flattened bread seals shut far more easily and crisps right through instead of staying doughy inside.
Fill the centre
Spoon a little pizza sauce, cheese, and chopped vegetables onto one half of each slice. Keep the filling well away from the edges, so the pocket can close cleanly and nothing leaks out.
Seal the pockets
Fold each slice over the filling and press the edges firmly with a fork to crimp them shut. Brush the outsides with softened butter, which is what turns the bread golden and crisp.
Air-fry until crisp
Arrange the pockets in a single layer and air-fry at 180°C for 10 min, flipping halfway, until both sides are deeply golden. Rest them briefly before biting in, as the filling stays very hot.
