Ingredients
- Rice flour1.5 cups
- Roasted gram (besan)1/2 cup
- White sesame seeds1 tbsp
- Cumin seeds1 tsp
- Red chilli powder1 tsp
- Hot oil + water2 tbsp + as needed
Method
Mix the dry base
Combine rice flour, besan, sesame seeds, cumin, chilli powder and a good pinch of salt in a bowl. Stir well so the spices distribute through both flours evenly.
Bind the dough
Pour the smoking-hot oil over the flour and mix with a spoon, then add warm water a splash at a time. Knead into a soft, pliable dough that pipes without tearing.
Pipe the spirals
Load the dough into a chakli press fitted with the star disc. Press tight coils directly onto squares of parchment, starting from the centre and spiralling outward.
Set the basket
Lift each parchment square into the air-fryer basket and peel it away once the spiral holds firm. Mist the tops very lightly with oil so they brown rather than dry out.
Air-fry crisp
Air-fry at 180C for 18 minutes, turning the spirals once halfway for an even bronze finish. Cool completely so they harden into crackly chaklis before storing.
