Ingredients
- Sweet potato, cubed3 medium
- Chaat masala1.5 tsp
- Black salt1/2 tsp
- Lime juice1 tbsp
- Chopped mint & coriander1/4 cup
- Pomegranate seeds1/4 cup
Method
Cube and dry
Peel the sweet potato and cut it into even cubes, then pat them dry. Cubes of the same size cook at the same pace so none burn while others stay raw, and drying the surface helps them brown.
Light oil toss
Toss the cubes with a little oil and a pinch of black salt so they brown without sticking. Hold the chaat masala back for the end, since adding it now would scorch it and lose its fresh, tangy lift.
Spread to roast
Spread the cubes in a single layer so the hot air caramelises the natural sugars in the sweet potato. Crowding the basket traps steam, which softens them and dulls those sweet, browned edges.
Toss with the dressing
Tip the hot cubes into a bowl and shower them with the chaat masala, lime juice and chopped mint and coriander. Fold through the pomegranate seeds for juicy little bursts against the soft, sweet cubes.
Air-fry the cubes
Air-fry at 200C for 16 min, shaking the basket twice for even caramelising. They are ready when the corners are deep golden and the centres feel tender when pierced, not firm or dry.
