Ingredients

  • Boiled mixed sprouts1.5 cups
  • Boiled potato1 small
  • Oats flour3 tbsp
  • Chaat masala1 tsp
  • Onion, finely chopped1/4 cup
  • Mint leaves2 tbsp

Method

  1. Coarsely crush sprouts

Pulse the boiled sprouts a few times so they break down but still keep some whole grains for texture. Stop before it becomes a smooth paste, since a little coarseness is what gives the cutlets their bite.

  2. Mix the body

Combine the crushed sprouts with the mashed potato, chopped onion and mint. The potato works as a gentle binder that holds everything together, while the onion adds a sweet, sharp note.

  3. Season and thicken

Sprinkle in the chaat masala and oats flour and mix well. The oats flour soaks up the extra moisture from the sprouts and onion, so the mixture holds its shape firmly when pressed.

  4. Form patties

Shape the mix into thick round cutlets and press the edges in so no sprouts poke out and burn. Smooth the tops with damp hands, which stops the surface cracking as it cooks.

  5. Air-fry until firm

Lay the cutlets in a single layer and air-fry at 185°C for 16 min, flipping halfway through. They are ready when crisp and golden outside and heated all the way through to the middle.
