Ingredients

  • Whole wheat flour dough1.5 cups
  • Spiced boiled potato, cubed1.5 cups
  • Sprouted moong1/2 cup
  • Sweet yogurt3/4 cup
  • Tamarind chutney3 tbsp
  • Chaat masala1 tsp

Method

  1. Roll and drape

Roll the dough thin and cut rounds, then press each over an upturned oven-safe bowl or mould to form a cup. Prick the base all over with a fork so it bakes flat instead of ballooning up in the middle.

  2. Oil the katoris

Brush the draped dough inside and out with a thin film of oil for an even, golden bake. Keep the rims a little thicker than the base so the cups do not crack or split when you fill them later.

  3. Prep the filling

Toss the cubed potato and sprouted moong with the chaat masala and a pinch of salt. The crunchy sprouts play off the soft potato, and seasoning now lets the flavour settle in before serving.

  4. Fill the cups

Once the katoris are crisp and cool enough to handle, spoon in the potato and moong mix. Top each with sweet yogurt, tamarind chutney and a final dusting of chaat masala for a sweet, tangy finish.

  5. Air-fry the katoris

Set the moulds in the basket and air-fry at 185C for 14 min until the cups are firm and golden. Let them cool a minute before easing them off the moulds so they hold their shape and do not tear.
