Ingredients
- Boiled noodles1.5 cups
- Cabbage and carrot, shredded1 cup
- Schezwan sauce3 tbsp
- Spring onion2 stalks
- Tortilla wraps2 large
Method
Toss the noodle filling
Mix the boiled noodles with the shredded cabbage, carrot and schezwan sauce until everything is coated an even red. Fold in the chopped spring onion for a fresh, sharp lift that balances the heat of the sauce.
Taste and adjust
Check the seasoning and stir in a little more schezwan sauce if you want extra punch. Season the filling boldly, since some of that heat mellows once it is wrapped and the tortilla softens the spice around it.
Lay out the wraps
Spread each tortilla flat and brush a thin smear of schezwan sauce across the surface. That layer works like glue to hold the noodles in place, and it tucks a little extra heat into every bite of the finished roll.
Roll them tight
Pile the noodle mix along the centre of each tortilla and roll firmly, keeping the ends tucked in. A tight, snug roll stops the noodles slipping out and helps the wrap crisp evenly instead of unrolling in the basket.
Air-fry to crisp
Place the rolls seam-side down and air-fry at 195°C for 11 min until the tortilla is crackly and golden. Cooking seam down first seals the join so it stays shut. Cut on the diagonal and serve with extra sauce.
