Ingredients
- Paneer (thin strips)250 g
- Onion & capsicum (juliennes)1.5 cups
- Chaat masala1.5 tsp
- Garam masala1 tsp
- Kashmiri chilli powder1 tsp
- Oil1 tbsp
Method
Cut into strips
Slice the paneer into thin strips and cut the onion and capsicum into matching juliennes so everything wraps neatly into a roll. Even strips cook at the same pace, so nothing turns raw or overdone.
Season the mix
Toss the paneer and vegetables with oil, Kashmiri chilli powder, garam masala and salt until lightly coated. Hold the chaat masala back for the end, since its tangy punch fades if it cooks in the heat.
Layer in the basket
Spread the seasoned mix in a loose single layer so the strips brown rather than stew. Crowding traps steam and turns the filling soft and pale, so give the pieces room to catch the dry heat.
Halfway toss
Open the basket midway and toss the mix so the onion and paneer colour evenly. Push any pale pieces out toward the edges, where the airflow is strongest and browning happens fastest.
Air-fry and finish
Air-fry at 190°C for 11 min until the paneer edges are golden and the peppers turn smoky and soft. Sprinkle over the chaat masala and coriander while hot, then pile the filling into warm rotis or parathas.
