Ingredients
- okra250 g
- gram flour3 tbsp
- chilli powder1 tsp
- turmerichalf tsp
- amchur1 tsp
- oil1 tbsp
Method
Slice
Wash the okra, then wipe each pod completely dry before slicing it lengthways into thin strips. Any water left on the okra brings out its sticky sap, so drying it well first is the trick to strips that turn crisp, not slimy.
Season
Mix the gram flour with the chilli powder, turmeric and amchur in a wide bowl. Combining the spices into the flour first means they spread evenly over every strip instead of clumping in one spicy patch.
Coat
Toss the okra strips with the oil first, then add the spiced flour so it clings all over. The thin film of oil helps the dry flour stick to each strip, giving an even coat that crisps into a light, spiced crust.
Spread
Lay the strips out in a loose single layer with a little space between them. Crowding traps steam and turns okra soft, so an open layer lets the hot air dry each strip and crisp it right through.
Air fry
Air fry at 180°C for 16 min, shaking the basket twice so the strips cook evenly. They are ready when dark green, dry to the touch and crackling crisp, with no soft or damp strips left in the middle.
