Ingredients
- Bread slices4
- Boiled sweet corn3/4 cup
- Chopped spinach1/2 cup
- Cream cheese or mayo3 tbsp
- Mozzarella, grated1/2 cup
- Chilli flakes & pepper1 tsp
Method
Make the topping
Combine the boiled corn, finely chopped spinach and cream cheese with the chilli flakes, black pepper and a little salt. Mix until the spinach is evenly coated and the topping holds together in a thick paste.
Spread thickly
Pile the corn and spinach mixture generously onto each bread slice, pressing it right to the edges. A thick, even layer cooks through without the exposed bread edges catching and burning.
Crown with cheese
Scatter the grated mozzarella over the top so it melts into a golden cap. The cheese seals in moisture and gives the toast its stretch, while covering the topping so it does not dry out.
Air-fry till golden
Place the open slices flat in the basket and cook at 190°C for 10 min until the cheese bubbles and turns spotty brown. The base should be crisp and the spinach just wilted through.
