Ingredients
- Frozen veg momos10 pieces
- Oil spray1 tsp
- Water1 tbsp
- Momo chilli chutney3 tbsp
Method
Keep them frozen
Air-fry the momos straight from the freezer, because thawed wrappers tear easily and the filling leaks out. Gently separate any that are frozen stuck together so each one cooks evenly on all sides in the hot air.
Light moisture trick
Brush or sprinkle a little water over the momos, then add a light mist of oil. The water keeps the wrappers soft and glossy on top while the oil lets the base crisp, which together mimic the moisture of a steamer.
Space them out
Arrange the momos pleat-side up with gaps between them so they puff without sticking together. Crowding the basket makes them clump into one mass and steam unevenly, so give each dumpling a little breathing room.
Rotate midway
Shake the basket gently or turn the momos around halfway so the bases brown evenly, not just the ones nearest the heating element. Re-mist them lightly with water or oil if the tops start to look dry.
Air-fry till plump
Air-fry at 180°C for 11 min until the wrappers are tender and glossy and the bottoms are lightly crisp. Serve them at once with the fiery momo chilli chutney while they are hot and juicy inside.
