Ingredients
- Corn cobs3
- Butter, melted2 tbsp
- Mayonnaise3 tbsp
- Chilli powder1 tsp
- Lime juice1 tbsp
- Crumbled feta3 tbsp
Method
Cut into ribs
Steam or microwave the whole cobs for two minutes first to soften them, then carefully quarter each one lengthwise into long ribs with a sturdy knife. Softened cobs are far safer to cut, as the blade does not slip on a hard raw cob.
Butter the ribs
Brush the cut ribs all over with melted butter and a pinch of salt. The butter helps the kernels char and puff so the ribs curl into their signature shape, and it carries the flavour deep into the grooves.
Mix the crema
Stir the mayonnaise, lime juice and half the chilli powder into a smooth, tangy crema. Keep it chilled until serving, as a cool creamy dip against the hot charred corn is what makes this dish taste balanced.
Air-fry until curled
Lay the ribs cut-side up and air-fry at 200C for 15 min until the kernels blister and the ribs curl. Slather with the crema, dust over the rest of the chilli powder and finish with crumbled feta before serving warm.
