Ingredients
- Rice flour1.5 cups
- Moong dal, soaked 1 hour2 tbsp
- Butter1 tbsp
- Sesame seeds1 tbsp
- Cumin seeds1 tsp
- Red chilli powder1 tsp
- Oilspray
- Salt1 tsp
Method
Cook the flour
Bring 1.5 cups water to a boil with the butter and salt. Lower the heat, add the rice flour all at once and stir quickly until there are no dry patches. Cover, turn off the heat and leave for 10 minutes. Cooking the flour this way gives smooth dough that rolls without cracking.
Knead in the flavour
When the dough is cool enough to handle, add the drained moong dal, sesame, cumin and chilli powder. Knead with oiled hands until smooth.
Roll small ropes
Pinch off small pieces and roll each into a thin rope about 8 cm long and the thickness of a pencil.
Make the rings
Join the two ends of each rope and press to seal into a small ring. Keep the finished rings covered so they do not dry out and crack.
Spray and arrange
Spread the rings in one layer in the basket and spray them lightly with oil.
Air-fry crisp
Air-fry at 170°C for 16 min, shaking the basket halfway, until golden and hard when tapped. Cool one and break it: it should be crisp all the way through. Store in an airtight jar once fully cool.
