Ingredients
- Pizza or focaccia dough350 g
- Olive oil3 tbsp
- Fresh rosemary1 tbsp
- Flaky sea salt1 tsp
- Garlic, minced1 clove
Method
Press the dough
Press the dough into a small oiled tray that fits your basket, stretching it out to about 2 cm thick. Let it rest for 15 minutes so it relaxes and puffs slightly, which gives the baked focaccia a lighter, airier crumb.
Dimple and oil
Press your fingertips deep into the dough to make dimples, then drizzle generously with olive oil so it pools in the holes. Those oil-filled dips crisp and go golden, giving focaccia its signature dimpled, tender-crisp texture.
Top it
Scatter the rosemary, minced garlic and flaky salt evenly across the surface, then press them in lightly. Pushing the toppings into the dough helps them stay put during cooking instead of blowing loose in the hot air.
Air-fry until golden
Set the tray in the basket and cook at 180°C for 12 min until risen and golden brown on top. Let it cool slightly before cutting into bite-sized squares, so the crumb finishes setting and the pieces slice cleanly.
