Ingredients
- Brinjal (long type), sliced2 medium
- Gram flour (besan)1 cup
- Rice flour2 tbsp
- Turmeric and red chilli powder1/2 tsp each
- Nigella seeds (kalonji)1/2 tsp
- Salt and a pinch of sugarto taste
Method
Prep the brinjal
Slice the brinjal lengthwise into thin even pieces so they cook through evenly. Sprinkle with a little salt and turmeric and set aside for a few minutes.
Whisk the batter
Combine gram flour, rice flour, turmeric, chilli powder, nigella seeds, salt and sugar with just enough water to make a thick coating batter. The rice flour is the secret to extra crunch.
Coat each slice
Dip the brinjal slices one at a time, swirling so the batter clings on both sides in an even layer. Let the excess drip off so the coating crisps rather than steams.
Preheat the basket
Preheat the air fryer briefly and brush the basket lightly with oil to prevent sticking. Spray the coated slices on both sides with a fine mist of oil.
Air-fry the beguni
Place the slices in a single layer without overlapping and air-fry at 200C for 12 minutes, flipping halfway, until the batter is golden and crackly.
