Ingredients
- Cornmeal1 cup
- Plain flour3/4 cup
- Honey3 tbsp
- Milk3/4 cup
- Melted butter3 tbsp
- Baking powder2 tsp
Method
Mix dry first
Whisk the cornmeal, flour and baking powder together with a pinch of salt. Mixing the raising powder evenly through the dry flour first means the bites rise the same amount all over and bake light instead of patchy and dense.
Add the wet
Stir in the milk, honey and melted butter until just combined into a thick batter. Stop the moment the dry streaks vanish, because over-stirring cornbread batter develops the flour and turns the soft bites rubbery.
Fill the moulds
Spoon the batter into greased silicone mini moulds, filling each about two-thirds full. The grease helps them release cleanly, and that gap at the top gives the bites room to rise into a dome without spilling over.
Settle the batter
Tap the filled moulds gently on the counter a few times to knock out any large trapped air bubbles. This settles the batter level so each bite bakes into a neat, evenly rounded shape rather than a lopsided one.
Place in basket
Set the filled moulds into the air fryer with a clear gap around them so the hot air can move freely. Even circulation all round is what gives every bite the same consistent golden crust, top and bottom.
Air-fry until set
Air fry at 175°C for 12 min until the tops spring back when pressed and a skewer comes out clean with no wet batter. Brush the bites with a little extra honey while they are still warm so it soaks in for a glossy top.
