Ingredients
- Green plantains2
- Coconut oil1 tbsp
- Turmeric1/4 tsp
- Asafoetida (hing)1 pinch
- Saltto taste
Method
Peel and slice
Rub a little coconut oil on your hands and knife, then peel the firm green plantains and slice them into thin, even discs, using a mandoline if you have one. Drop the slices straight into water mixed with a little turmeric to hold their colour.
Dry completely
Drain the discs after 10 minutes and spread them out on a towel until they are fully dry. Surface water is the enemy of a crisp plantain chip, since damp slices steam in the basket and stay soft rather than turning brittle.
Season the oil
Whisk the coconut oil with the turmeric, a pinch of hing and salt, then toss the dry slices through it. Coating them in seasoned oil rather than sprinkling dry spice on top spreads the flavour and colour evenly over every disc.
Air-fry to golden
Lay the slices in a single layer and air-fry at 175°C for 13 min, shaking gently twice so they colour evenly. Cool them fully on a rack afterwards, because the chips firm up and turn properly crunchy only as they cool down.
