Ingredients
- Sweet corn kernels1.5 cups
- Besan + maida mix3/4 cup
- Spring onion, chopped1/4 cup
- Black pepper, crushed1 tsp
- Green chilli, minced1
Method
Crush some corn
Lightly crush about a third of the corn kernels with the back of a spoon and leave the rest whole. The crushed corn releases its starch and helps bind the batter, while the whole kernels keep that juicy pop in every bite.
Mix the batter
Combine the corn with the flour mix, spring onion, crushed pepper, green chilli and salt, adding only a splash of water. The mixture should be thick and just barely scoopable, not runny, so the fritters hold their shape.
Portion the fritters
Spoon small, flattened rounds onto an oiled, parchment-lined basket with gaps between them. Keeping each one thin means the centre sets through before the edges over-brown, so you get an even cook rather than raw middles.
Air-fry until golden
Mist the tops with oil and air-fry at 190°C for 13 min, flipping once midway. They are done when the surface is golden all over and the edges have turned crisp, while the inside stays soft and moist.
