Ingredients

  • Boiled potatoes3 medium
  • Ginger-green chili paste1 tbsp
  • Garam masala1 tsp
  • Breadcrumbs3/4 cup
  • Cornflour2 tbsp
  • Saltto taste

Method

  1. Mash and spice

Mash the boiled potatoes while still warm and mix in the ginger-green chili paste, garam masala and salt. Knead lightly until smooth and holding together, as warm potato takes on flavour best.

  2. Bind the dough

Sprinkle in the cornflour and mix until the mash firms into a soft, pliable dough. The cornflour soaks up stray moisture and keeps the nuggets from cracking open as they cook.

  3. Shape the nuggets

Pinch off small portions, roll them into rounds, then gently press into flat nugget shapes. Keeping them the same size means they all cook through and brown at the same time.

  4. Coat in crumbs

Roll each nugget in breadcrumbs, pressing lightly so the coating sticks all over. A fine mist of oil on the crumbs helps them turn a deep golden and extra crackly in the basket.

  5. Air-fry till golden

Air-fry at 190°C for 16 min, flipping halfway for even colour. They are done when the crumb shell is golden and crisp to the touch and the nuggets feel firm, not soft.
