Ingredients
- Boiled potatoes3 medium
- Whole-wheat rotis or wraps4
- Frankie masala1.5 tsp
- Sliced onion1 medium
- Green chutney3 tbsp
- Lemon juice1 tbsp
Method
Make the spiced filling
Mash the boiled potatoes and mix with frankie masala, salt and a squeeze of lemon. Shape the mixture into thick logs the length of your wrap so they roll up neatly without spilling.
Crisp the potato logs
Lightly coat the logs in oil and air-fry them alone at 190C for eight minutes until lightly browned. This firms them up and adds a roasted edge before they go into the wrap.
Assemble the roll
Spread green chutney over each wrap, lay a crisped potato log along one edge and scatter sliced onion and a dash of frankie masala. Roll tightly and tuck in the sides so the filling stays put.
Secure and brush
Wrap a small strip of parchment or fasten with a toothpick to hold the roll closed. Brush the outside all over with a thin film of oil for an even, blistered finish.
Air-fry to flaky finish
Place the rolls seam-side down in the basket without overlapping. Air-fry at 190C for 10 minutes, turning once, until the wraps are golden, flaky and crisp at the edges.
