Ingredients
- Bread slices4
- Paneer, crumbled1 cup
- Thick curd & tikka masala3 tbsp
- Onion & capsicum, diced1/2 cup
- Grated cheese1/2 cup
- Butter2 tbsp
Method
Marinate the paneer
Toss the crumbled paneer with thick curd, tikka masala and a pinch of salt, then rest it for ten minutes. The curd coating soaks in during this rest and gives the filling its tangy, lightly smoky tikka flavour.
Add the crunch
Fold the diced onion and capsicum into the marinated paneer so every bite has fresh crunch. Drain off any watery liquid first, because excess moisture is what turns the bread soggy instead of crisp.
Fill and cheese
Butter the bread, spread the paneer mixture over two slices and scatter grated cheese on top before closing. Press the sandwich firmly so the filling and cheese bind together and hold when you slice it.
Air-fry until set
Brush the outsides with butter and cook at 195C for 14 min, flipping once, until the crust is deep golden and the cheese has melted into the paneer. Cut and serve hot with extra chutney.
